Taste of CA: Recipe Standardization Workshop
Do you want to learn how to develop standardized recipes for your School Nutrition Programs (SNP) using locally grown ingredients that your students will love? The Team Nutrition (TN) Taste of CA Recipe Standardization Challenge (Taste of CA Challenge) grantees who developed student-approved standardized recipes featuring locally grown ingredients are offering a free, in-person, full day Recipe Standardization Workshop in various locations throughout California.
Course Description
The 2023 Taste of CA: Recipe Standardization in Small Bites workshop provides the foundational steps of developing U.S. Department of Agriculture (USDA) standardized recipes. During this interactive workshop, attendees will participate in hands-on cooking stations to sharpen culinary skills and prepare a shared meal featuring a Taste of CA Challenge recipe. TN grantees will also host small group discussions to share best practices in scratch cooking, menu planning, local procurement, school community engagement, and marketing and promotion.
Objectives
- Describe a standardized recipe, the benefits of using one and list the three main phases of the USDA Recipe Standardization process.
- Recognize the benefits of using locally grown ingredients and scratch cooking to develop recipes students will love.
- Identify strategies for engaging students and the school community in the process of developing standardized recipes for school meals.
- Sharpen culinary skills including knife skills, culinary math, cooking methods, and spices.
- Discuss the opportunities for professional growth in response to changes in the school nutrition environment. (Funding, collaboration, and support for scratch cooking and local procurement.)

Target Audience
This workshop is intended for child nutrition staff including school nutrition directors, cafeteria managers and staff that participate in the development and preparation of recipes for the school meal program

This workshop includes a self prepared catered meal. Please bring at least $15 dollars to cover the cost of your meal, actual costs may vary between locations.
